Recipe from the Culinaria of the United States

1/2c butter (1 stick)
1 1/2 c sugar
3 eggs
1/4c Milk
1 T cornmeal
1/4t salt
1 t Vanilla 
Juice of 1 Lemon
grated peel of one Lemon
1 9-inch unbaked pie shell

Cream butter and sugar together with a wooden spoon (or in a stand mixer). Beat in eggs one at a time. Beat in milk, mixing well. Add cornmeal, salt, vanilla, lemon juice and peel, again mixing well. Pour mixture into pie shell and bake in a preheated 350 degree F. oven until set, about 45 minutes. Cool to room temperature before serving.
